As an emerging local food star, Chef Clendon Springer is capturing the attention of hungry diners all over the Tristate. He sat down with me in his restaurant at Hollywood Casino, just twenty minutes outside of Cincinnati, to talk about gambling, emptiness and why he cooks like a man.

I’d love to check out the manly food at Final Cut. Great read, thanks for sharing.
What a great article about a (now)local chef. I wanted to go to chef school when I was young, and I have regretted not going ever since. I look forward to eating this mans food, and hopefully some day meeting him.
Count me in!
I know it’s not #ff but y’all should follow this lady @Epiventures! She is remarkable! And Her blog is bangin!
Great article, food sounds amazing! I love the way you write, such detail and feeling. Thanks for letting us in!
Sounds like the perfect place for a “staycation.” Thanks for sharing.
I’d comment for free but bribes work too.
Oh darn, I said legitimate comments. Oh well, better luck next time! (Just kidding, naturally)
I want to come now just because I found out Clendon’s homeland is St. Lucia. I will never forget the people of St. Lucia and the most wonderful bread and the smell of the yeast in St. Lucia. Nothing this good exists in the US that I have found. Clendon you are a special guy and please, please continue to honor your homeland in ways you can with your cooking at the Final Cut. How about an exotic fruit desert in honor of St. Lucia or a wonderful salad course paying homage to the St. Lucia spirits of the rain forest!
Thanks for the write up! Makes me wanna give it a shot. Bonus that it’s only about 20 minutes from me.

Great article
I would love to try the Final Cut Steakhouse! Those ribs are making me hungry
wonderful article. sounds like a GRADE A restaurant. This man is living MY dream. Kudos!!!
Gambling and steak…I’m not sure my wallet can handle it!
After watching an episode of Man v. Food, I have a whole new appreciation and desire to eat as many bone in ribeyes as I possibly can. Considering the restaurant on the episode was in the Niagra Falls area, this looks like a much better option considering gas prices. It is always nice to have options…
I’ve been to Final Cut once before and would love to go again! Best and biggest filet minon you’ll find anywhere.
I love a rib eye steak cooked hot on the outside and Medium Rare on the inside. That with a really hot baker and a good Merlot would take me to heaven!
I love this place! great atmosphere!
Good job, I worked with Clendon at Kenwood Country Club, could tell he would make it big here in Cincinnati.
Congrats, Bill! I selected your number on random.com which means you’ve won $50 to Final Cut Steakhouse! I’ll contact you soon to hook you up.
wish that I had a job to be able to take my wife there and try this restaurant!
Great article that someone enjoys cooking at Final Cut.
Good Luck!!
gosh that steak sure looks good. I have walked past the final cut and it looks so high class, sophisticated, pretty.
Only if tip included
Can’t wait to try it. It sounds incredible!
The food is pretty good. I suggest trying the crabcake appetizer, the spinach salad, and another salad served in a bowl of cheese, lol.
Great article. If I hadnt read it I would have thought the restaurant was a place to sit and eat hotel food. I haven’t been to Hollywood since the remake from Argosy, but your article, the restaurant and the club make me want to make a night of it soon.
Had dinner there not long after Final Cut opened, and had the bone-in filet, it was excellent, as was the rest of the meal. It wasn’t cheap, but I definitely plan to go back.
Kudos to Clendon Springer, whom I understand is one of the tri-states best chefs. I’ve not had the pleasure, thus far, of dining at the Final Cut Steakhouse but I’m sure it will be coming in the very near future. Truly, a great story, Courtney!!!!
I’ve had the privilege & pleasure of dining at the Precinct & the “House of Prime Rib” in S.F. in the last year. The Hollywood Casino Restaurant sounds like another ultimate dining destination. With or without the gift certificate I suspect I’ll be checking it out.
I lived in Lawrenceburg, IN my entire life until I recently moved to West Chester, OH to be closer to work. My wife and I visit Hollywood Casino occasionally to either gamble with friends or eat with my Mom, Dad and grandmother who still live in Lawrenceburg. We have not tried your restaurant yet in the pavillion and – I’ll go ahead and say it; the $50 gift certificate would be a nice added bonus to try it to see if we will put it in our rotation. Thank you!
This article made my mouth water!
The bone-in KC Strip is awesome!! I’d love to go back for another.
Mmm. Nothing like a good steak. I’ll have to give them a try next time I’m out there!
Love these chef snippets. I can’t believe I haven’t been out to Hollywood yet. My to-do list in this city is ever-growing!

Been looking for a new steak house to try out. I never even considered the casino. Thanks for printing an article to highlight the new choices. Thanks Chef Springer for bringing us the wonderful selection.
I am impressed and intrigued! Ruby’s is my mainstay when I’m craving a steak; but next time, I’ll make the trek to the Hollywood Casino to check out the final cut!
Great article!
I’ve been to the Marquee Grill and the Passport Buffet, and liked them both. Looks like I’ll have to try Final Cut as well!
I have always been partial to a particular steakhouse here in town and would love to see if someone new could give them a run for my money.
This looks like a place to try. It will be interesting to see how it compares to Ruby’s.
I’ve been to Final Cut 3 times since it’s opened. Once for my parents 50th wedding anniversary, once for a work event and lastly for friends visiting from NY. My friends commented how great a steak they had in this casino restaurant. This is every bit as good as a Ruby restaurant, and I’ve eaten at them all, with the price point to match. Excellent job Chef!!
MY nephew cooks an unusual Rib and calls it “Pig Wings”. Do you have anything like that on your menu?
Very interesting article. I would enjoy visiting and comparing with Jeff Ruby’s establishments. The Hollywood Casino is a fun place to go. Just visited last Saturday “Boogie Nights” in Hollywood for a friends birthday. Next time I will have to stop in and try Chef Springer’s creations.
I have eaten there twice since June and both time the filet mignon has been excellent! The sides are big enough for everyone to share and the desserts are to die for.
I love to cook and my wife says I should have pursued this avocation. Unfortunatly, I am left with reading all that I can and learning and trying different things much to her demise. Enjoyed the article.
Final cut sounds like it would be a wonderful place to grab a meal before a night of gambling. Chef Clendon sounds like he is on his way to stardom!
I have been wanting to try Final Cut Steakhouse. I have heard good things about it from friends who have tried it.
Haven’t been to Hollywood since they changed the name of it, but have heard several VERY positive things about the food, this gives those comments some meat. Gonna have to go try it . . .
I can’t wait to try out this place. It look delicious!
We have been to Final Cut twice. We love it!!! The food is awesome!!!!!!!
Sounds like a great addition to Hollywood….would love to try it soon
I love a good steak!!
I enjoyed the article about Mr.Clendon Springer at Hollywood Casino, really makes you want to run over there to try and thick juicy perfectly cooked steak..Yummy

ЎHola!
No estб seguro de que esto es verdad:), pero gracias a un cargo.
Doggy
You will not find a better steak in the area.
Also, be sure to order the house salad if for nothing else the flavored pecans-Wonderful.
Not cheap, but worth it.
I always like a good steak. A friend once told me lettuce is what food eats. I will be heading down to give the steak a taste first of next month
I have eaten at Final Cut and it has always been exceptional. I have never had a steak as tender and well cooked as I have at Final Cut. The service and atmosphere are first class.
My parents live fairly close and have visited Hollywood to eat at Final Cut- I chuckle at the name, however the food sounds promising. I would love to give it a try sometime in the near future. I like more steakhouse options that arent Outback or the traditional chain.
Haven’t had a good steak in awhile. Would love to try it!
Great article Courtney! sounds like a good guy and wow, that is a lot of people to cook for.. amazing.. if I can drag my husband to a casino, will have to check it out.
Thanks to all the commenters and tweeters! The lucky winner is Bill (the fist Bill) — who I’ll be contacting shortly!
