As an emerging local food star, Chef Clendon Springer is capturing the attention of hungry diners all over the Tristate. He sat down with me in his restaurant at Hollywood Casino, just twenty minutes outside of Cincinnati, to talk about gambling, emptiness and why he cooks like a man.

What a great article about a (now)local chef. I wanted to go to chef school when I was young, and I have regretted not going ever since. I look forward to eating this mans food, and hopefully some day meeting him.

I want to come now just because I found out Clendon’s homeland is St. Lucia. I will never forget the people of St. Lucia and the most wonderful bread and the smell of the yeast in St. Lucia. Nothing this good exists in the US that I have found. Clendon you are a special guy and please, please continue to honor your homeland in ways you can with your cooking at the Final Cut. How about an exotic fruit desert in honor of St. Lucia or a wonderful salad course paying homage to the St. Lucia spirits of the rain forest!

After watching an episode of Man v. Food, I have a whole new appreciation and desire to eat as many bone in ribeyes as I possibly can. Considering the restaurant on the episode was in the Niagra Falls area, this looks like a much better option considering gas prices. It is always nice to have options…

Great article. If I hadnt read it I would have thought the restaurant was a place to sit and eat hotel food. I haven’t been to Hollywood since the remake from Argosy, but your article, the restaurant and the club make me want to make a night of it soon.

Had dinner there not long after Final Cut opened, and had the bone-in filet, it was excellent, as was the rest of the meal. It wasn’t cheap, but I definitely plan to go back.

Kudos to Clendon Springer, whom I understand is one of the tri-states best chefs. I’ve not had the pleasure, thus far, of dining at the Final Cut Steakhouse but I’m sure it will be coming in the very near future. Truly, a great story, Courtney!!!!

I’ve had the privilege & pleasure of dining at the Precinct & the “House of Prime Rib” in S.F. in the last year. The Hollywood Casino Restaurant sounds like another ultimate dining destination. With or without the gift certificate I suspect I’ll be checking it out.

I lived in Lawrenceburg, IN my entire life until I recently moved to West Chester, OH to be closer to work. My wife and I visit Hollywood Casino occasionally to either gamble with friends or eat with my Mom, Dad and grandmother who still live in Lawrenceburg. We have not tried your restaurant yet in the pavillion and – I’ll go ahead and say it; the $50 gift certificate would be a nice added bonus to try it to see if we will put it in our rotation. Thank you!

I’ve been to Final Cut 3 times since it’s opened. Once for my parents 50th wedding anniversary, once for a work event and lastly for friends visiting from NY. My friends commented how great a steak they had in this casino restaurant. This is every bit as good as a Ruby restaurant, and I’ve eaten at them all, with the price point to match. Excellent job Chef!!

Very interesting article. I would enjoy visiting and comparing with Jeff Ruby’s establishments. The Hollywood Casino is a fun place to go. Just visited last Saturday “Boogie Nights” in Hollywood for a friends birthday. Next time I will have to stop in and try Chef Springer’s creations.

I have eaten there twice since June and both time the filet mignon has been excellent! The sides are big enough for everyone to share and the desserts are to die for.

You will not find a better steak in the area.
Also, be sure to order the house salad if for nothing else the flavored pecans-Wonderful.
Not cheap, but worth it.

I have eaten at Final Cut and it has always been exceptional. I have never had a steak as tender and well cooked as I have at Final Cut. The service and atmosphere are first class.

My parents live fairly close and have visited Hollywood to eat at Final Cut- I chuckle at the name, however the food sounds promising. I would love to give it a try sometime in the near future. I like more steakhouse options that arent Outback or the traditional chain.
